EXECUTIVE CHEF AVI TURGEMAN

My culinary vision at the David Citadel Hotel is to touch people through food, and bring them to a thrill with every bite that comes into their mouth, in textures. That every meal or event at the hotel will be built according to an amazing story or concept, and accordingly create a suitable atmosphere.
I believe in the minimalization of standard kitchen work in the back kitchen, and think that you should take the beauty of the kitchen and bring it out correctly, into the plate in front of the guest's dish, or make a fine tartar combined with an alcoholic drink and sorbet "screams" to be wow. Less sophistication and more real delight for diners.
Working at the Jerusalem David Citadel Hotel is one of the biggest and most insane challenges I've ever made in my life from a culinary standpoint. A hotel that conveys quality, luxury and a good life.
The most challenging thing for me is to take quality raw materials, combine them right in terms of tastes and textures "kosher kitchen" - and come with it for unique tastes.
I have been in the profession for 23 years. I worked and studied all over the world, especially from home. I do not believe in shortcuts and in instant, but in hard work every day.
In the last place I worked, the FoodArt, I got all the insights associated with the combination of catering and restaurateurs, while maintaining the values that are motto for me - quality and service.
I am a great believer in creating from the existing: charcoal grills, market tomatoes, herbs, fresh fish, local tahini, spice mixtures with intoxicating odors, sardines and barbony. Our country is full of wonderful raw materials. We are in the Middle East, and here I combine my self with my food where I believe and the David Citadel Hotel.

Our amazing Sous Chef was born and raised in Jerusalem, in a household filled with the smells of fresh daily cooking. Moti began his cooking career 30 years ago, specializing in Shabbat home cooked style catering, both in Israel and Europe. Today, Chef Moti is the lead chef for our acclaimed 'heimishe' style Shabbat and traditional delicacies. Chef Moti creates a true feeling of home, with a chef's touch!
