Ingredients
24g Gelatin + 120ml water
450ml vegetarian cream
Vanilla stick
150g egg yolks
80g sugar
700g Lotus spread
960ml whipped vegetarian cream

Bottom Layer
200g Lotus cookies
100g melted white chocolate (pareve)
100g melted margarine

Preparation
Soak the gelatin in water.
Bring the cream to the boiling point in a small pot, add vanilla; mix egg yolks and sugar in a separate bowl, pour the cream and mix the egg yolks while stirring, put the batter back into the pot and cook while stirring until the mass heats up to 80ºc.
Strain the batter and pour it over the lotus spread, mix well and cool to room temperature.
Whip the Vegetarian cream and fold into a mass. Heat the margarine and white chocolate in a microwave in pulses until it is completely melted, pour over a mix of ground lotus cookies, and mix well. In a mold, cover the bottom with the mix of ground cookies, pour the lotus cream on top, flatten, and refrigerate overnight.
